A super simple yummy soup...pefect for these cold days we're experiencing.
Black Bean Soup
Ingredients:
1 medium onion, chopped
4 cloves garlic, minced
1 T. cumin
½ tsp. crushed red pepper flakes
2 T. oil
3 (15 oz.) cans black beans
1 ½ c. chicken broth
3 c. salsa
2 T. lime juice
Directions:
In large saucepan over medium heat, cook onion, garlic, cumin, and pepper flakes. In a small amount of oil until onion is tender, about 4-5 minutes. Remove from heat. In blender, puree 2 cans of beans with chicken broth, working in batches if necessary. (Do not drain beans.) Add to pot. Stir in remaining can of beans, salsa, and lime juice. Heat to a boil, reduce heat to low and simmer for 30 minutes. Serve topped with sour cream, if desired.
